In a medium bowl, lightly whisk the egg and kefir together
1
Add the rolled oats, ground flaxseed, chia seeds, baking powder, and salt. Stir well until combined. (Pro-tip: If you prefer a completely smooth texture without whole chia seeds, you can blend all the ingredients together in a blender)
2
Let the batter sit on the counter for 10 minutes. The ground flaxseed and chia seeds need this time to absorb the liquids, create a gel-like bond, and make the pancakes extra fluffy
3
Heat a non-stick skillet over medium-low heat and grease it lightly with a bit of olive oil, coconut oil or butter. Pour spoonfuls of the batter onto the skillet
4
Cook for about 2–3 minutes until small bubbles form on top and the edges look set. Flip gently and cook the other side for another 1–2 minutes until golden brown
5
Top with honey, granola, banana or whatever you prefer and enjoy ☺️
