If using frozen broccoli, bring a pot of salted water to a boil and cook the spears for 4–5 minutes until tender but still bright green. If using canned asparagus and beans, drain them and warm them gently in a small pan with a splash of their liquid for 2–3 minutes until heated through.

Arrange the warm broccoli, asparagus, and snap beans on two serving plates, dividing evenly. Scatter the alfalfa sprouts over the top.

Drizzle each plate with olive oil and squeeze fresh lemon juice generously over the vegetables. Season lightly with salt and black pepper.

Bring a shallow pan of lightly salted water to a gentle simmer. Crack each egg into a small cup and slide them in one at a time. Poach for 3–4 minutes until the whites are fully set but the yolks are still soft — the yolk should wobble gently when you nudge the pan.
