If your prunes feel stiff, soak them in hot water for 5–10 minutes, then drain thoroughly. Skip this if they are already soft and juicy
1
Place the hazelnuts in a food processor or blender. Pulse until they form a coarse crumble (keep some texture for a nice crunch), but do not blend them into powder
2
Add the prunes, cocoa powder, ground flaxseed, and salt into the food processor with the nuts. Blend until a sticky, cohesive dough forms and clumps together. If it feels too dry to roll, add 1 tablespoon of hot water or coffee and blend again
3
Scoop out bite-sized portions and roll them tightly between your palms into balls. Place them on a plate lined with parchment paper and chill in the fridge for 15 minutes to firm up
4
Chop the couverture chocolate and place it in a bowl. Melt it either using a double boiler (bain-marie) or in the microwave in 30-second bursts, stirring in between
5
Using a fork, dip each energy ball into the melted chocolate. Let the excess chocolate drip off, then place them back onto the parchment paper
6
Return the coated balls to the refrigerator for at least 30 minutes until the chocolate shell sets completely
7
Enjoy ☺️
