Heat 3 tablespoons of olive oil in a large heavy-bottomed pot over medium-high heat. Add the chicken pieces and brown on all sides for 6-8 minutes, turning occasionally, until a deep golden crust forms. Work in batches if the pot is crowded. Transfer the browned chicken to a plate and set aside.

Lower the heat to medium. Add the diced onion to the same pot and cook for 4-5 minutes, stirring occasionally, until the onion is translucent and just beginning to colour at the edges.

Add the minced garlic and stir constantly for 1 minute, until fragrant and the sharp raw smell has mellowed. Do not let it brown.

Add the tomato paste and stir it into the oil. Cook for 2-3 minutes, pressing it against the bottom of the pot, until it darkens slightly and smells less raw.

Pour in the red wine and scrape up any browned bits from the bottom of the pot. Let it simmer for 2-3 minutes until the sharp smell of alcohol is gone and the liquid has reduced by roughly half.

Return the browned chicken to the pot. Add the cooked cowpea tips, pink beans, and yellow snap beans. Pour in just enough water to barely cover everything and bring to a gentle simmer over medium heat.

Scatter the dried apples over the top. Season with salt and pepper. Partially cover the pot, reduce the heat to medium-low, and simmer for 30-35 minutes, until the chicken is tender and pulling away from the bone and the sauce has thickened and deepened in colour. Add a splash of water if it looks dry.

Taste and adjust the seasoning. If the sauce is still thin, remove the lid and simmer uncovered for a further 5-10 minutes until it coats a spoon. The dried apples should be soft and the stew should smell sweet and savoury together. Serve hot.
