Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Season the beef with salt and black pepper, then brown it in batches for 3–4 minutes per side, until a deep golden crust forms on each piece. Don't crowd the pot, or the meat will steam rather than sear. Set the browned beef aside on a plate.

In the same pot, add the chopped onions and cook for 5–6 minutes, stirring occasionally, until they are soft and translucent and have picked up the browned bits from the beef. Add the minced garlic and cook for another minute, until fragrant.

Pour in the red wine and let it simmer for 2–3 minutes, scraping up any stuck bits from the bottom of the pot with a wooden spoon. The wine should reduce slightly and smell less sharp. Return the browned beef to the pot.

Stir in the tomato paste, coating the meat and mixing it evenly into the liquid. Add enough water or beef stock to just cover the beef, around 2–3 cups. Drop in the bay leaf and season with salt and pepper.

Bring the pot to a gentle simmer, then cover and reduce the heat to low. Braise for 60–70 minutes, stirring occasionally, until the meat is fork-tender and the liquid has reduced to a rich, concentrated sauce that coats the back of a spoon.

While the beef braises, prepare the vegetables. Roughly chop the kale and chrysanthemum greens. Cut the green cauliflower into small florets. Have the cooked broccoli and cooked kidney beans measured out and ready to add.

About 15 minutes before the beef is fully tender, stir in the kale and chrysanthemum greens, pressing them down into the simmering liquid. They will wilt and darken within a few minutes. Add the cauliflower florets, cooked broccoli, and kidney beans.

Simmer uncovered for 10–12 minutes, until the cauliflower is just tender when pierced with a knife and the vegetables have absorbed some of the sauce. Taste and adjust seasoning with salt and pepper.

Ladle the stew into wide shallow bowls, making sure each portion has a good amount of beef, greens, vegetables, and broth. Serve with warm bread on the side for soaking up the sauce.
