Boil the pasta: Cook the pasta in a large pot of salted water 1-2 minutes less than the package instructions (until al dente). Reserve 1 cup of pasta water before draining

Cook the meat: In a large deep pan, sauté the pieces of bacon over medium heat without extra oil until crispy and the fat renders. Remove from heat

Make the sauce: In a bowl, whisk the 4 eggs with the grated cheese and plenty of black pepper until combined

Combine: Add the hot pasta directly into the pan with the bacon and toss over low heat for 1 minute

The creamy secret: Turn off the heat completely. Wait 30 seconds for the pan to cool slightly, then pour in the egg mixture. Stir quickly and continuously. Add a splash of the reserved pasta water to create a rich, velvety sauce

Tip: Always add the eggs off the heat to prevent them from scrambling! Serve immediately with extra cheese and pepper
